  • Hoping for something quick, easy, and tasty? Therefore were we simply last week,
    when we desired something to bring towards the volunteers at our every week downtown walk.

    We volunteer there once a month, and, to attempt to ensure that we won't be
    the only types during our shift, we bring something. This week: cheese straws.
    This recipe comes from The Lee Bros. Southern Cookbook, by none other than Ted and Matt Lee.
    (Evidently, they are really brothers.) They've put
    together a wide variety of dishes of Southern meals, some common, some not so
    traditional, and, from how big is the book, they have nearly every recipe that you might need, and,
    probably, a couple of you do not. We've attempted several their
    dishes before because they all sound so excellent. Oh, before you get scratchin', realize that you can't beverage through these straws.

    Makes about 30 straws.
    3/4 cup all-purpose flour
    1/4-1/2 tsp red pepper
    1/2 tsp kosher salt
    4 Tbs unsalted butter, slightly warm and cut into pieces
    1 Tbs half-and-half or cream
    Abbreviated Instructions
    Preheat oven to 350°F.
    Place all ingredients, except half-and-half
    or cream, in the bowl of a food processor. Pulse until it resembles coarse crumbs.

    With processor chip running, pour in half-and-half.
    Process until a dough forms, about 10 secs.
    On the lightly-floured work surface, roll out dough to 1/8 inch thick.
    Slice into ribbons 1/4-inches wide and transfer to some parchment-lined baking
    sheet.
    Bake for 12-15 minutes, or until lightly browned and sharp.

    Great on sheet for 3 minutes, then transfer to a rack to great completely.
    Ingredient discussion:
    Since you're baking cheese, you really need to use a extremely sharp cheese.
    In the past, we've attempted a milder mozzarella cheese, and all of the taste gets washed away.

    They were incredibly bland, but we discovered our lesson and
    are moving it on so you need not learn it, as well.
    Procedure at length:
    This is almost a dump-and-mix recipe. Place everything in a meals processor chip
    and whirr.
    Process most everything. This is a really super-simple recipe; simply place all the ingredients, apart from the half-and-half, in the food
    processor and set it to whirring. We like to set the meals processor in the sink since flour will sometimes shoot out throughout the edges.
    Following a few pulses it'll look all crumbly.
    After about 15 seconds, everything will look all crumbly.
    Roll it out to on the subject of 1/8 inch thick. Too thick
    and they won't crisp. As well thin, they'll burn off.

    Roll out. We simply use our counter to move out doughs. We
    lightly flour it, scrape the lump of dough about it, and roll it out.
    Periodically you'll need to add a dusting of flour.

    Keep rolling until it's about 1/8 of the inch thick.

    Slice them about 1/3 in . wide. They'll puff a bit in the
    range in order that they appearance similar to straws.

    Slice. Use a sharpened knife to cut the dough into slim strips.
    We start 1/3 of the inches wide. Transfer the strips to a baking sheet range with parchment, making certain there's
    a little space between straws. They are doing spread only a
    tiny amount.
    Bake. Slide them into the range and bake for 12-15 a few minutes, or until they start to brown and look crispy.
    We rotate the sheet halfway through cooking.

    Cool. Remove the sheet, allow cool for about 3 minutes, after that transfer straws to a
    rack to awesome the rest of the way.
    Taste. We bet you can't consume just one!


    This Mexican cabbage Recipe is so
    easy and fast, yet it delivers an extremely tasty snack
    (that it is harder to completely clean up afterwards, well, perhaps a little harder).
    Perfect when you want a little something that looks a bit elegant,
    but with actual down-home taste. By the time our volunteering was completed, so were these mozzarella cheese straws.
