Let's capture up. How are you?
This week I joined a new gym, where I'm quite certain my trainer
is either Big Foot, a marine, or a professional wrestler. He
shows my Nike Schooling Camp classes, which are a mixture of plyometrics, military
drills, cardio, and weights. Actually sweating waterfalls each and every time I
go out of there; it is rather like the Insanity movies!
I just believe he's endeavoring to destroy me. But
who knows.
I've been savoring living alongside the ocean as much as possible.
Each day I try and make it right down to the seaside.
I don't suggest to make you jealous BUT understand this
view from my rooftop! Amazing.
I'm not even prepared for Summer to get rid of or these sunny days that appear to under no
circumstances cease. I'm falling my roommate off in the airport in a couple of hours, where she'll head to Greece to get a vacation… on a
yacht. WHAT!
I can't even talk about it because I'm so jealous.
My weekend programs consist of even more cooking, maybe a small surfing,
and most likely a dinner with these mushroom + kale quesadillas and probably several roasted
turkey legs and potatoes blueberry basil margaritas to drown in my sorrows.
Only kidding, I'll be fine.
Probably my trainer would relax if I offered him
a margarita? But then again, he's there to press me
to help me enter great shape; that's why I produced these skinny!
I cannot go around taking in pie and doing leap squats; those two activities would not blend well.
These strawberries certainly are a great party appetizer or summer
time treat for anyone. The filling is made with reduced-fat cream mozzarella cheese,
nonfat vanilla greek yogurt (proteins!), key lime juice and zest.
All you need to do is definitely hollow
out the strawberries then fill up them with this blend.
We topped my strawberries with sliced toasted almonds, but I believe that
crushed graham crackers would add a lovely structure
and become more reminiscent of a true essential lime pie
or cheesecake.
So actually the filling can act as a dip, too!
A creamy, healthful essential lime cheesecake flavored dip perfect enough to serve to guests at a celebration,
give your children, or simply to distract you from
actual pie.
Well until in a few days when pie gets control this blog and I toss pictures of oreos, bananas, peanut
butter, and whip cream in your face. So just trust me,
consume skinny things while you still can.
Skinny Key Lime Cheesecake Stuffed Strawberries

Ingredients
1 teaspoon essential lime zest
Optional toppings: Sliced toasted almonds, graham cracker crumbs,
extra zest, chocolate drizzle
Instructions
Rinse the strawberries and dry. Remove the top with a pairing knife; set strawberries apart until ready to fill.
Whip the cream mozzarella cheese until it is fluffy and light.
Fold in yogurt, important lime juice, and zest; blending
until well mixed. Refrigerate to thicken, about 20 minutes.
Add cream mozzarella cheese mixtue to a pastry handbag or ziploc
bag with the end cut off. Fill up each strawberry using the combination and add additional toppings
such as almonds, graham crackers crumbs, or chocolate drizzle if preferred.
Serve immediately or put in place freezer for one hour for
a awesome treat.
